What is the easiest digital multitrack recorder to record with?

I'm an acoustic singer/songwriter looking to record 2 maybe 3 tracks at a time that can then be layered with 2-3 additional tracks. I'd like something to record directly to that can then move files to a computer-based recording software for mixdown.

I have a mac, so I use Garage Band... it came with "iLife" and it's really easy to learn.
